Hummus Pasta

I made dinner EASY as hell this week. I've been living basically in the car for months. Driving a lot, and on the go constantly. So here's a yummy super easy way to get good healthy food, and on the go. Plus it's better cold anyway.


Ingredients

  • 1/4 to ½ cup pasta water, reserved

  • 2 ½ cup dried pasta

  • 1 cup frozen peas

  • 1 cup Hummus (store bought it okay)

  • 2 cups fresh greens (kale, chard, spinach, etc.)

  • Sea salt to taste optional

  • Black pepper to taste optional


How To:

  • Cook the pasta according to package instructions, in well-seasoned boiling water.

  • Two minutes before the pasta is finished cooking, add the frozen peas.

  • Before draining the pasta, reserve(~½ cup) of the cooking water and set aside. Drain the pasta and peas and add back to the pot.

  • Stir in the hummus and half the cooking water. Add more pasta water as needed to thin the sauce to your desired consistency.

  • Add the greens and stir to wilt. Season if needed and serve immediately.

  • Leftovers are better the following day, but the sauce will thicken slightly as it sits. The pasta can be eaten cold.
